I have never been one of those people to see fall coming and suddenly turn into a Pumpkin Spice Maniac. I enjoy pumpkin pie (especially as breakfast the day after Thanksgiving when it seems somewhat on the wild side!) But I don’t feel the need to have everything in my life pumpkin spice flavored. I do not need pumpkin spice flavored: bacon, gum, cereal, latte or toothpaste….
But I will admit the flavors of pumpkin spice do extend nicely beyond just pie…like to cheesecake!
A few years ago, when I started this blog even, I held my self to a very high, very basic standard…everything had to be done from scratch. From pie to bread to baked beans, I doing it the
right hard way. Me and Soule Mama? Yeah, we were in the same boat. BFF’s practically. Well, life has intervened in ways I never could have dreamed of, and I no longer do everything from scratch. So here I present to you a recipe for White Chocolate Pumpkin Spice Cheesecake the can be assembled (and cleaned up after) in ten minutes flat!
Step 1: Combine a no-bake cheesecake mix and JELL-O Pumpkin Spice Flavor Instant Pudding. Set mixture aside.
Step 2: Take a knife and make slivers from the BAKER’S White Chocolate. This was my favorite part of the process…I think I could have spent all day making these little white chocolate slivers just for fun!
Step 3: Combine no-bake cheesecake JELL-O Pumpkin Spice Flavor Instant Pudding mixture with the amount of milk recommended on the package. Beat on medium for 30 seconds, and then gently add in white chocolate slivers. Set aside.
Step 4: Mix up graham cracker crust from no-bake cheesecake mix according to directions, and place in the bottom of mini mason jars.
(I bought these jars at Walmart a few months back and have been using them for everything, cause “mini” just makes it fun!)
Step 5: Add in pumpkin spice cheesecake mixture.
Step 6: Add a generous dollop of JET-PUFFED Marshmallow Creme*.
*Marshmallow creme is its own special brand of heaven…so sweet and delicious! Remember when you were a kid and used to look up at the clouds and dream of bouncing on them? I’m pretty sure in my fantasies the clouds were made of (non-sticky) marshmallow creme…yum.
Put these mini cheesecakes in the fridge until you are ready to serve! Aside from being cute, I like to make dessert in these little jars because they are pre-portioned and it makes them serving them so easy.
I was able to find everything I needed in the Kraft Holiday Bake Center at our local Walmart. Not only was it convent, it only cost about $7 to buy everything I needed! My kids love to pour over this display! Holiday baking is one of their favorite holiday traditions.
