Hearty Breakfast Cookie

A filling, hearty, breakfast cookie for busy mornings.

  • 1/2 Cup butter
  • 3/4 Cup peanut butter
  • 1 Cup brown sugar
  • 2 eggs
  • 1 1/2 Teaspoon vanilla extract
  • 6 Tablespoons milk
  • 2 Cups oatmeal
  • 1 3/4 Cup flour
  • 1 Cup additions (nuts, seeds, etc)
  • 1 Teaspoon baking soda
  • 1/2 Teaspoon salt


  1. Preheat oven to 350 F

    Cream together the butter, peanut butter, and sugar. 

    Add eggs, vanilla, and milk.

    In a separate bowl, mix the remaining ingredients.

    Combine wet and dry ingredients and mix well.

    Spoon onto a cookie sheet. These cookies should be large (they are breakfast, after all). They don't spread at all, so don't be afraid to put them close.

    Cook for 10-12 minutes.

    Cool completely and store in an airtight container. These can be frozen in freezer bags and will last several months.
