Easy Weeknight Dinners That Can be Prepped Ahead
School officially starts here next week so it is high time to start thinking about easy weeknight dinners.
School this year looks different than it ever has before. Hezekiah and Jubilee will be doing Running Start through our local community college. Mordecai will continue with home-based learning provided by the school, Avi will be doing distance learning through the school. Tucker and Apollo will be straight up homeschooling…and for the first time ever we will be having two extras join us this year…former classmates of Apollo’s whose parents work fulltime.

I anticipate that next week will be fun/exciting/stressful/busy and all the other things. So I am working now to put together some easy weeknight meals to at least cut down on one area of stress.

Greek Pasta Salad
This has become a favorite on hot summer nights…but the other great thing about it is it can be prepped ahead of time and just pulled out of the fridge to eat.

Taco Tuesday
Because let’s be honest…every day is a good day for tacos! And everything can be completely prepped ahead of time.

Chalupa with Rice or Chips
We love chapula in our house. You can put all of the ingredients in the crockpot and just let it cook all day long. It is so quick and filling.

White Chicken Chili
This is another family favorite that is perfect for busy weeknights. This can be made in the crockpot or Instant Pot.

Philly Cheesesteaks
This is a family favorite. Unfortunately, I only have pictures of our campfire cheesesteaks…for utter perfect, cook a roast in your crockpot and use that meat for your sandwiches.
