This Labor Day weekend we had some of our favorite friends over. You might recognize them from our camping trips to Oregon. It’s actually kind of funny. When we met Greg and Merriann they had one toddler and we had 10 kids under 10. Their life looked so simple compared to our collection babies and toddlers with an older kid or two thrown in. Now when we get together we have it easy while they juggle diapers, babies and sippy cups with their six kids.
Greg and Merriann are the kind of friends that you don’t have to impress, dress up for, clean the bathroom for, or even plan ahead. Our “let’s get togethers” usually end up with us sharing not one but two meals together. When we get together for lunch we often don’t part ways until the kids need to go to bed.  The best part? Greg and Merriann often provide the food, sparing me the need to cook.
Because…let’s be honest.
If I were a food blogger (which I’m not) and I ran a food blog (which I don’t) it would be called something like The Lazy Chef or Cooking Efficiently or I Really Hate to Cook Dot Com.
While I don’t enjoy cooking, I have it down to more or less a science so I can get in and out of the kitchen in record time. In addition, I enjoy eating food, which means I really care about flavor as well. Real flavor, real fast. That’s my kind of cooking.
At first, I was going to make one of my favorite outdoor meals, Campfire Cheese Steaks for Labor Day…but we have burn bans on (due to more wildfires) and I had just picked up a Smithfield Roasted Garlic & Herb Loin Filet at Walmart. I wanted to do something fun with the filet…
So I concocted a delish pork variation of my cheese steaks using my BFF (otherwise known at The Kitchen Appliance I Can’t Live Without). AKA my pressure cooker.
This recipe is quick, easy, and is made by the not-so-secret ingredient….carmelized onions. With only about ten minutes prep time and  25 minutes in the pressure cooker this recipe is also perfect for busy weeknight dinners.
Smithfield® Marinated Fresh Pork offers a variety of fresh pork (tenderloins, roasts, and filets) at Walmart so you could easily change this recipe up for variety. I would also be good served with rice or roasted potatoes.
These were so, so, so good. I am already planning to make them again. Soon.Â
